Chicken Cordon Bleu II
I prepared this dish for my husband and friends and they and I were very impressed :) I made a few changes: I used twine (no toothpicks), 1/2 olive oil and 1/2 butter versus (vs. all butter), breadcrumbs (no flour), 1/2 heavy cream and 1/2 half & half (vs. all HC), after browning in skillet, I baked chicken in oven at 350 for 20 mins, and I added fresh chopped basil right before serving and it really was just icing on the cake! I served chicken over white rice and broccolli (next time I will do asparagus instead).

Appetizer Mussels
This recipe is so great! It's yummy, quick, easy, and inexpensive! It was my first time making mussels and they were perfect. My husband loves mussels so I made this as part of our Valentine's dinner and we both loved it! I couldn't find the tomato & clam cocktail juice, so I mixed regular tomato juice with clam juice. I will be making this again for sure!

Kona Chicken
I will definitely make this again. It was so easy and really good! I gave it 4 stars vs 5 because I tweaked the recipe. I reduced the amount of soy sauce to 1/2 the amount the recipe called for. I used low sodium soy sauce. Instead of chicken breast, I used boneless skinless chicken thighs, and cooked them in the crockpot for 4 hours on low. I added: 3 cloves of garlic, grated some fresh ginger. The last hour of cooking, I added whole mushrooms. The last 10 mins, I added broccoli. Served it over steamed rice and everyone loved it. You could easily add other veggies or maybe even some pineapple too.
