Mexican Rice II
I had never cooked "real" rice before, but it definitely takes longer than 20-25 minutes. It took over an hour for the rice to cook. It missed dinner, but everyone tasted it when it was done and loved it. The recipe is very good. I doubled the recipe and added tomato boullion in place of tomato sauce and it was really good. We'll definitely be keeping it with our enchiladas!
