This was fantastic! I was looking for something to make with swiss chard because my husband had picked some for me. I sauteed onions and garlic first and added mushrooms. Then added the steamed swiss chard. Then then juice of a fresh lemon and salt and pepper. I was planning to add tomato and serve over pasta but tried it first. It was out of this world. No tomatoes necessary. Served over pasta with fresh grated parmesan cheese. Definitely will make this again! Thank you.

Topsy-Turvy Apple Pie

Made this for my hubby's bday since apple pie is his favorite! He loved it and couldn't get enough! I'd like it better with the addition of 1-2 cups of fresh/frozen cranberries. My husbands only complaints were he had to share with others and he gained weight.

Avocado and Orange Sandwich

Thai Coconut Chicken

Loved this dish! My family is vegetarian so the only thing I did differently was replace real chicken with frozen "Quorn" chicken breast substitute. The whole family loved it! Thanks for sharing.

This is off the hook insanely good! The only thing I did differently is I am vegetarian so I bought Morning Star frozen chicken strips and breaded and fried those instead of the real mc coy! Everyone loved it! This recipe is a DEFINITE keeper!

Avocado, Tomato and Mango Salsa

This is pretty good. I am a fan of salsa w/o mango I have decided. And I LOVE mangos! Just not so much in salsa. It is fun to serve something with a twist though

French Spring Soup

This was great! Love it for anytime but it is a GREAT spring soup. It is awesome exactly as the recipe instructs it to be made. I substituted vegetarian chicken broth. Other then the vegitarian substitution the first time I made it I thought I had heavy cream in the house but when it came time to add it I found out I did not, so I substituted Cream Cheese (the 1/3 less fat kind). It was very good that way. My husband said he liked it even more when he found out it was low in fat. The way with the cream is also delicious.

Vegetarian Tortilla Stew

This was incredible. Everyone who ate it wanted more! I added some refried beans to the mix too. I have been looking for a vegetarian version of this soup that rocks and this is it! Enjoy.

Spinach and Strawberry Salad

My husband thought I was insane making this he was sure he wouldn't like it! He loved it! Everyone I have ever served this too LOVES it. I like the addition of Avocado and use balsamic vinegar in place of the regular kind.

Fried Green Tomato Sandwich

Its ok. I am looking for different ways to make fried green tomato's. I thought this looked neat but I liked the red tomato's in the sandwich a whole bunch and was disappointed with the green ones. Sand-which is great with just red tomato's. Fried green tomato's better alone then in the sandwich.
