High Temperature Eye-of-Round Roast
Wow! I can't believe it worked, but the roast turned out fantastic! Perfectly cooked, red in the center, pink throughout.

Eggplant Parmesan II
This recipe should not be called Eggplant Parmesan! The eggplant was buried in sauce on the bottom layer and dry and bready at the top. I did sweat the slices, pat dry, bake them for 10 minutes each side. I'll try a different recipe next time, maybe "oven-fry" in a little oil at a higher heat.

Maple-Glazed Pork Chops
Wow! This maple glaze is the perfect balance of tangy and sweet. Next time, I would probaly leave off the brown sugar under the broiler because it was a bit too sweet for our tastes. The cooking time in the oven was perfect too.
