Eggplant Parmesan II
This recipe should not be called Eggplant Parmesan! The eggplant was buried in sauce on the bottom layer and dry and bready at the top. I did sweat the slices, pat dry, bake them for 10 minutes each side. I'll try a different recipe next time, maybe "oven-fry" in a little oil at a higher heat.
