Microwave Oven Peanut Brittle

I cannot stop eating this! I used pecans because my daughter has a peanut allergy. I am sure it would be that much more fabulous with peanuts! I found this to be very simple to make! I will probably slightly adjust the cooking time next time, because I have a very slight burnt taste to my pecans. I actually don't mind it though! This is delicious! I wish I tried this one before Christmas!!!

Taco Seasoning I

I like this a lot, but it is way too spicey for my kids. I think I will leave out the crushed red pepper next time and maybe cut down on the black pepper. Make sure you have some sour cream on your tacos to cut the heat!!! It's a great starting point though! Thanks!

Buffalo Chicken Dip

This was pretty tasty. Easy enough to make. I did end up adding more hot sauce because it was kind of bland for my tastes. I liked it with the celery, but next time I will definitely pass on the chicken flavored crackers. They were weird with this. Oh, and this does not taste just like buffalo wings by any stretch, but it is tasty in its own. Makes a lot too, so if you are only having a small group, you may want to half the recipe. I might make this again.

Slow Cooker Delight

Okay, I am not one for giving bad reviews, but after I made this, I went back and re-read the whole recipe, and I didn't leave anything out. Just a bad combination of good ingredients. AND, when I cooked it on low for 4 hours as directed, the potatoes were not done and the barley was still crunchy. NOT a keeper.

Homemade Black Bean Veggie Burgers

My husband is a vegetarian and I cringe every time I look at the price of store-bought veggie burgers. I made these today and he told me never to buy veggie burgers ever again! I used all of the ingredients according to the recipe but I just threw it all into my food processor and made a paste. It was a little too thin then, so I added a few more bread crumbs, coated my hands with oil, and shaped them into balls. I pressed the balls on a wax paper lined cookie cheet and stuck the whole thing in the freezer. Once they were frozen solid, I threw one on the grill and put the rest in a freezer bag. Thank you for this recipe!!! Oh I did use egg beaters instead of a whole egg to cut the fat. AND my husband said they taste just like the veggie burgers from Chili's.

Easy Creamy Vanilla Fudge

I try not to give bad reviews, but this recipe wasn't great. I made it last night and it did taste mostly like hardened confectioner's sugar. Today, after sitting, it's a little better. So maybe it will be even better tomorrow, but I won't make it again. Mine did harden okay though, no problem there like in some other reviews.

One Bowl Chocolate Fudge

This recipe is AWESOME! I made a batch last night, and it's already gone. So, I made more tonight. I found it worked better over a double boiler than in teh microwave. Mine burned a little in the microwave and the chocolate chips never got smooth. The double boiler was easier to regulate. We will keep this forever!!!

Chicken and Corn Chowder with Thyme

I was looking for a recipe to use up some frozen corn. I had a leftover rotisserie chicken and used that in place of the chicken breasts. Also omitted the green onions as we are having an e.coli issue with them right now in our region. Added some parsley to add some green color in place of the green onions. Used whole milk instead of half and half and thickened at the end with a little cornstarch. I thought this recipe was great, and it helped me use up some stuff out of my regrigerator and freezer! I am keeping this one!

Eggless Peanut Butter Cookies

My daughter is not only allergic to eggs, but she is also allergic to peanuts! I followed this recipe but substituted soy butter (sweetened) and also added 1 tsp. vanilla extract as recommended by other reviewers. SHE LOVES THESE! And my husband and I think they taste great too! Now my little girl can have "Peanut Butter" cookies like everyone else! Thank you!

Baked Slow Cooker Chicken

This recipe is a great place to start! Being that I am an onion lover, I also peeled a whole onion and put it inside the cavity of he chicken. It gives the meat some added flavor. I also like to sprinkle the skin with a little onion powder in addition to the paprika and salt and pepper. I bought a meat rack for my slow cooker; so I don't even have to used the foil. Such a simple delicious dinner!!!

Best Ever Corn Muffins

These are AWESOME! They were so sweet and moist! I only got 6 muffins out of this batch using muffin tins. Maybe using cupcake tins you would get 12. I'm not really sure what that was about. Thanks for the great recipe, Kelly! I will use it again and again!
