I am a single mom of two small children. I work from home. My kids have food allergies. One is allergic to peanuts and the other is allergic to eggs. It can make cooking tricky at times.
My favorite things to cook
I personally love anything that's soft, warm, and gooey or saucy! We eat a lot of "cheap" foods because of a tight budget. So we end up with a lot of casseroles, and I often get creative with leftovers!
My favorite family cooking traditions
I come from a long line of expert soup makers! It is expected in my family!
Thanksgiving has become my holiday. You cannot beat a brined turkey, homemade cranberry sauce, stuffing made from homemade bread, pumpkin pie, and, of course, green bean casserole!
My cooking triumphs
My mom was always the greatest cook in the world. She has a lot of "famous" (within the family) recipes. I have tweaked some of her recipes and often get told that my version is even better. Sssshhh. Don't tell!!!
My cooking tragedies
I had this OLD stove/oven in my apartment. One Christmas morning, I had the whole family over to have breakfast and watch my daughter open her presents from Santa. I put the egg casserole in the oven and went to join everyone. An hour later when the casserole was supposed to be done, it was still a runny mess. Somehow the oven had gotten stuck to BROIL and would not bake. I ended up microwaving the whole casserole. Took forever. I was mortified.
