Bacon-Wrapped Scallops
Very average. I did not use the spinach but I did like/use the idea of the brown sugar. That was a nice touch. Also, the squirt of lemon right before serving was a big improvment. If I were to do these again, I'd use more brown sugar and make some sort of dipping sauce.

Sweet Potato and Hazelnut Mashed Potatoes
I liked how creamy these potatoes became. However, I couldn't taste the nuts at all and only used 1/2 the cream and sourcream. You could probably get away with using lowfat on both those items and it wouldn't matter. The only problem is that they are very bland. I made them with the Beef Tenderloin/Port Shiitake reduction. The flavors went okay together, but the beef in that reduction was WAY TO SWEET!

Bacon and Balsamic Glazed Sugar Snap Peas
This tasted good but I agree with an earlier posted that you must drain a lot of the bacon fat. Also, I made the mistake of using a non-stick pan (the only pan I had left) and so I believe it made the snap peas even greasier. Good flavor with the balsamic and sugar.
