My picky husband (who is half Mexican) and I both loved this super easy soup! I made it with one can mild enchilada sauce and one can hot to get a nice medium kick. I went overboard on the pork and my crock pot wasn't quite big enough to fill with any additional water, but it sure made for a nice chunky soup! It was great for leftovers and I added a few splashes of chicken stock to the leftovers to give it more liquid. This one's a keeper.
