I loved this, as did my hubby and daughter. HOWEVER, it was not a hit with the teens who attended the super bowl party at our house. It IS versatile. I served it heated with cheese over Fritos. Again I added chicken fajita strips and heated. Served with cheese, sour cream, and chips or tortillas. It makes GOBS!

Southwestern Corn and Walnut Dip

I loved this. I served it chilled and warmed. Some found it waaaaaaaay too spicy. Great with Fritos!

Traditional Reuben Casserole

I made this tonight and it is very good. I messed up the recipe a bit. I used too much bread, but it made it more like a sandwich to be honest. I just sort of made it from memory. Guess my memory isn't that great! I skipped the sour cream and used about a half cup Thousand Island dressing squirted over the casserole. Good...and I'll have it again. Hubby liked it.

Chili Rellenos Casserole

Hubby loved it so much that he ate THREE servings at one sitting! I liked it but not madly. Daughter didn't like it at all, but in all fairness, she doesn't like chili rellenos. So...there you have it!

Ultimate Roast Beef Blues Sandwich

Quick and easy. I found the basil a little overpowering for my taste. I put the rolls in the oven opened with pecans on one side and bleu cheese on other. Let the pecans gets toasty and the cheese melty. Added warmed roast beef slices and mayonnaise with basil. Good for a week night meal.

Italian Spaghetti Sauce with Meatballs

I was so disappointed because I wasn't able to make the meatballs! My daughter put the meat in the freezer! I didn't have time to thaw for meatballs. SO...I made a meat sauce with all the ingredients except the bread and egg. I had to throw in bunches more seasonings as we love our spaghetti with gobs of flavor. That was my only complaint with this recipe!

Shrimp and Avocado Cocktail

This is a family favorite but I don't use the cocktail sauce. I use tomato juice with chopped tomatoes, minced jalapeno peppers, and diced red onion, celery, and bell pepper. Sort of like a cocktail!

Easy Cranberry Chicken

Lovely for this time of year! A definite crockpot recipe! Serve over leftover stuffing! Add some dried cranberries and toasted pecans. Use this sauce over pork, too. A staple recipe that is so versatile! Thanks!

Chocolate Mocha Liqueur Cake I

This is reminiscent of a WONDERFUL cake I used to order every year from Neiman Marcus. I used French Chambord in place of the liqueur. Otherwise, I made it as the recipe called for it to be made. I served it on a dessert plate with whipped cream and fresh raspberries. Family went wild! Already clamoring for me to make another. If you really wanna impress, make this cake!

Almond-Tipped Shortbread Fingers

Very good and super easy! My 18 year old NON-cooking daughter has made this twice in the last week. Excellent holiday recipe. One change...we baked it like a pan cookie and sprinkled sliced almonds on top before we popped it into the oven. Then she shaved a Hershey's milk chocolate bar over the top of it as soon as it came out of the oven.

Anniversary Chicken I

This was tasty enough. I made it in the crockpot, so it was easy too. At first I forgot the cheese/bacon/green onions. Once I put that mixture on, it perked up somewhat. My family really liked it. I was just so-so. I'd make it again...definitely.

Creole Cornbread Stuffing

Wow! I admit to taking the lazy way and using Kroger frozen cook and eat dressing. Otherwise, I followed the recipe to the letter. RAVE reviews from family and friends. I served it with peppered ham, buttered baby Yukon gold potaotes, and asparagus a l'orange. Perfect blend of flavors and textures. I'm going to make it with shrimp and crabmeat next time.
