Double Layer Pumpkin Cheesecake
I normally make cheese cakes in a springform pan. This was SO easy and quick. We had about 5 pies this Thanksgiving and this one was the first to be goggled up. I wipped it up the night before in no time. I did use the graham cracker premade crust. However I used over 1 C. of the Libby's Pumpkin Pie filling only added a dash of extra cinnamon. I also bought the individual size premade graham crusts and and I got 1 full size pie and 5 small crusts (so the kids got their own pie) They thought that was so cool. I baked the small ones for 35 min. but the 9" pie took 55 min. I used Hershey's Dulce de Leche carmel topping and drizzled it over the pie and then topped with whipped topping and a pinch of cinnamon for show. It looked like it came from a fancy restaurant and it was so good! This is defintly a keeper! I had to send out the recipe to several relatives.
