Cola-Basted Ham
I followed this recipe for the first cooking period and in addition to frequent basting, I also turned the ham over hourly. It still came out a bit dry. For Aussies or anyone else eating this ham cold on Chrissy day, I'd suggest halving the initial cooking time then going on to the slurry step (minus the bread crumbs). The actual flavour was really good though. The sticky glaze on top was yum-o

Cheddar Beef Enchiladas
OMG this is fantastic!!! I did not add as much salsa to the soup as I was not sure if my 2yr old would find it too spicy, but she just devoured it (eating a whole enchilada by herself). I served this with extra salsa and a crisp salad as it is quite rich. Next time I will hide some veg in the sauce (by means of grating or pureeing the veg). Cannot wait to eat the spare one in the freezer! YUM!

Baked Ziti I
I have an electric oven so I only cooked it for 30mins (afterall, everything was already cooked and its just the cheese that needed melting). Im not sure if the sour cream element worked for me, but the kids loved it!
