Mediterranean Chicken with Eggplant
This was excellent. I didn't rate it a 5 because I had followed some of the instructions from others. I marinated my chicken in basalmic vinegar, lemon, and olive oil. Then grilled it for about 4 minutes on each side. I then cubed it up and finished the recipe as is. I did add a small layer of mozzarella between the eggplant and chicken. I was delicious. I served it with a greek salad. Yum! Yum! Will be making this one again!

Cake with Buttercream Decorating Frosting
This is the best buttercream recipe I have found. I tried many recipes without shortening and could never get the right consistancy or flavor I wanted. You can not taste the shortening in this recipe at all. I used almond extract in mine as well and it was great. I made 3/4 of the recipe and still had to freeze some remaining after doing a crumb layer and decorating a heart shaped cake. It works well with detailing and writing. Will used this one from now on!

Holiday Pumpkin Cake with Rum-Cream Cheese Glaze
If you love pumpkin pie but want a different take on it, you will love this recipe. It was easy to make and every one loved it. Cake needs to be completely cooled before you put on glaze. I was in a hurry when I made this and didn't wait long enough before I made the glaze so it melted but it was still delicious. The glaze is to die for, will use on other items!
