Baked Slow Cooker Chicken

For something so simple, this is really delicious! Followed a few tips found in the reviews. I skinned the chicken and marinated it overnight with a homemade marinade - salt, white and black pepper, garlic powder and chili powder. Lined the bottom after the pot with chopped carrots and potatoes, and stuffed the cavity with one small onion and 4 cloves of crushed garlic. After cooking on low for 8 hours, this was perfect!

Pumpkin Butter I

I used fresh pumpkin and simmered it in water for about twenty minutes, then pureed it. Followed the directions after that, and it turned out pretty good. Very nice on toast.

Peppered Bacon and Tomato Linguine

For something so simple, this was really good! Followed the other reviewers and left only a Tbsp or so of dripping in the pan. Used normal bacon, fresh tomatoes, and upped the amount of onion and basil. Absolutely delicious! Served with Pork Chops Stuffed with Smoked Gouda and Bacon from this site.

Pork Chops Stuffed with Smoked Gouda and Bacon

This was pretty good. I marinated the pork chop with a mixture of soy sauce, balsamic vinegar and mustard powder overnight, then eliminated the salt in the stuffing. Served with Peppered Bacon and Tomato Linguine from this site.

Salsa Chicken

I pan fried the chicken instead of baking and it still turned out pretty good. Used Taco Seasoning I from this site and marinated for about an hour beforehand. Served with Spanish Rice Original.

Spanish Rice Original

This is really filling! I used chilli sauce instead of tomato sauce, and chicken bullion and water instead of chicken stock. Used more liquid than was stated. Also added some paprika to the dish. Melted some cheddar on top and topped it with sour cream. Left out the olives, but the corn went really well with rice. Tastes even better the next day.

Parmesan and Basil Chicken Salad

I followed some suggestions from other reviewers – boiled the chicken with salt, pepper and a bay leaf, then cubed it. I let the chicken marinate in the pureed mixture for over a day. Then for a quick dinner, I boiled some pasta, and in the last five minutes added a clove of garlic and some peppers. Strained the pasta, added the cheese and mixture with the chicken, and voila, a delicious meal! Served with ‘Strawberry Onion Salad’ from this site. Will definitely make again.

Colcannon

I've never had Colcannon before, but I must say that this turned out pretty awesome! Followed another reviewer's suggestion and used nutmeg instead of mace. Also, I sautéed green onion (in place of leek) in butter before adding the milk. I let it simmer for a few minutes, so that the onion was slightly crunchy when everything was mixed together. Yummy!

Lemon Thyme Rice

Nice! Started off with browning some garlic with the butter. Also, added the thyme when the rice was halfway done, and the lemon almost at the end so that there's more flavor. Have made it repeatedly. Was very good with Spicy Garlic Lime Chicken from this site.

Italian Dressing Mix

Good in a salad, or to marinate meat with before cooking. Did not have celery salt on hand but it still turned out great. Used garlic powder, and only added 1 Tbsp of salt, and it was perfect. I prefer making the salad with balsamic vinegar and olive oil, leaving out the water. This makes a great seasoning as well.

Garlic Butter

This was surprisingly good. Scaled the recipe down to 4 and added half a teaspoon of oregano for that extra zing. Also added half a teaspoon more of minced garlic and used garlic powder instead of garlic salt. Used unsalted butter, and added only quarter teaspoon of salt, and it was just right. Will definitely make again. Thanks for the recipe!

Barley and Mushrooms with Beans

This was just ok, but then I did not add the white beans. I think next time I will sauté the veggies and remove them, adding them back in twenty minutes before the barley is done. I would prefer a longer cooking time to get the barley done to my liking. Went along well with garlic butter (awesome recipe from this site) and toasted bread.

Tomato-Cream Sauce for Pasta

This had a really good flavour! Scaled the recipe down to 3. Added 2 cloves of garlic, half a tomato and 2 tsp of tomato paste instead of what was called for. Also added more herbs. Will definitely make again.
