Avocado and Cranberry Mustard Turkey Wrap

My daughter, a new cook, decided to make this for a get together tonight. I stood by and assisted only when asked!! This is a great wrap idea, but the amount of mustand/cranberry sauce was enough for 10x the amount of wraps being made. I think the mustard to cranberry ratio is off as well. She had to add more cranberry and brown sugar or it wouldn't have been edible. Two slices of cheese seemed to work better than one. The combinations of turkey and cranberry work well and make a nice wrap. She was happy to have made something from scratch rather than resorting to a store bought contribution to the pot luck.

Vegetarian Cottage Cheese Patties

My step-son who's a vegetarian was visiting, so we decided to make the cottage cheese patties together. I had my doubts, but they were actually VERY good!! I'd coat them in seasoned bread crumbs to hold their shape. The entire family enjoyed them and they were a welcome break from red meat. Thank you!

Al's Quick Vegetarian Spaghetti

This recipe didn't read right without spices, so I just added what I usually do to sauce. The corn/carrot combo didn't work for me - thought it was interesting and I'd try it, but should have known better. The mushrooms and broccoli were very good. Nothing out of the ordinary here I'm afraid.

Apple Cider Sauce and Pork Loin Chops

The taste seemed a bit "off"....I like applesauce with pork chops, so thought the cider would give it a rich flavor. I felt it was more of a sweetened pork flavor. The onions were a hit, but I'd pass on the cider next time and stick with apples on the side.

Layered Chicken and Black Bean Enchilada Casserole

I think I'd use salsa rather than enchilada sauce next time - it was a bit bland for my family's tastes. I baked the corn tortillas which kept them crisper than they would have been had I not baked them. Will tweak this a bit next time - great basic recipe!

Garlic Prime Rib

Great rub on the exterior and the prime turned out perfectly! An 11 pound cut took nearly 4 hours to cook to medium rare however, so either my oven or the time stated are off a bit. Be sure to have a trustworthy meat thermometer for perfect results. Excellent recipe!

Cranberry Salad III

Even my 12-year-old niece who was expecting my standard "strawberry/pretzel salad" loved this one! The presentation is beautiful in a truffle bowl and was a standout on the Christmas buffet table. I made it just as stated - no alterations - perfect !

Seven Layer Salad

This is a favorite in our family. I "thin" the mayo (1/2 mayo, 1/2 Miracle Whip) with milk as it's a bit thick if the recipe is followed. I also use an iceberg mix with darker greens for better nutritional value as others have stated. Fresh shredded parmesan really stands out in the dressing. Wonderful !
