Spanish Rice
Very nice recipe. I multiplied for 8, and it made a LOT. I'm thinking it would feed 12 as a side dish. I used 3 cups of tomatoes (lots of fresh ones from the garden I'm trying to use). I used brown rice, and initially it was dry and a little bland. I added about a cup and a half water, and doubled up the spices (careful with the seasoned salt, tho) I also added cumin and finally, when I thought it just needed more zip, a little cayenne pepper. Yum. I hope I can freeze the extra!

Best Baconless Broccoli Salad
This is really good if you just steam the broccoli very, very briefly (not till it's soft). My family loved it last Thanksgiving and asked me to make it again.
