Beef Tenderloin with Ginger-Shiitake Brown Butter
I was very pleased with how this recipe turned out. The flavor was wonderful. The only change I made is that I used Cremini mushrooms instead of Shiitake. I couldn't find mirin in the wine section of my neighborhood grocery store. I eventually found it in the Asian products section. The bottle doesn't use the word wine, the product, from Kikkoman, is called "Aji-Mirin" and is defined as Sweet Cooking Rice Seasoning on the label. I hope this helps.

Old Fashioned Mac and Cheese
I followed the recipe exactly. This dish baked up beautifully. I had high hopes. And, it wasn't bad. But, the flavor was a bit bland. After one bite, everyone reached for the salt shaker. Once they added the salt, they all said it was good. But, it didn't wow them. I think that adding a splash of Tabasco or hot sauce or hot pepper jack cheese like some reviewers have suggested would solve that issue. I'll make this again and try to spice it up.
