I'm a recent nursing school graduate and, sadly, unemployed RN. The job market is not good right now. :( I love to read and, if I could get a job as a professional reader, I would be a millionaire-that's how much I read! I've been trying a lot of new recipes lately, since I have about 50lbs. to lose and all the time in the world to do it! I also can no longer afford to eat out all the time like I was before the economy went south. I love to cook and my dad loves to eat whatever I cook! My boyfriend is super picky and usually ends up whining because he thinks everything should taste like chicken wings and fries! ;)
My favorite things to cook
Kraft Mac & Cheese! Just kidding! No, really, I could eat it for every meal...but it is boring to cook. I love making things for the grill, like marinades or potatoes dishes. I love making beef and broccoli. I love making chili, soups, and stews.
My favorite family cooking traditions
My dad makes the best slow cooker beans and slow cooker chicken fricasse. I always beg him to make those for me. Absolute comfort food. Nothing I can cook will ever come close to his cooking. Unfortunately, my mother is a terrible cook and can only make less than 10 recipes. She hates everything I cook. :(
My cooking triumphs
Cooking grilled potatoes for the first time. My dad couldn't stop telling me how delicious they were, I think he said "delicious" after every bite! And my boyfriend actually LOVES them, he begs me to make them every time we grill.
My cooking tragedies
Artichokes. I can't cook them to save my life.

Swedish Meatballs I
I made this for a friend who was visiting. His mom always used to make Swedish Meatballs with mashed potatoes, so I agreed to give it a shot. I used Italian bread crumbs instead of the cream of wheat and I didn't add any onion. I also doubled the recipe, because we were having several other people over. I don't think the recipe doubled well, the sauce was a little too runny and the meatballs took about 10 extra minutes to cook. Despite all that, we still really enjoyed these. They were very tasty and the sauce was yummy. Went well with both mashed potatoes and noodles!

Onion-Roasted Potatoes
Delicious! We decided to put these on the grill and grilled them for about 25 minutes (we made a smaller batch). Easy, yet amazing!

Baked French Fries I
These were wonderful! So easy to make and soooo tasty! I'd been looking for an alternative to our boring grilled potatoes and these were delicious!
