Southern Comfort Ice Cream Pie

This was so good and so easy. You can't make it on the spur of the moment because you have to freeze it before serving, but everything else is really easy and the results are just so yummy! I took it to a family gathering, and it just disappeared. You must try this.

Grandma's Lemon Meringue Pie

I used my favorite crust recipe ( it has ice cold vodka to counterbalance the toughening effects of water) and added the juice from one more lemon (I have a lemon tree that is still covered with lemons), and the results were just delicious. Thanks for the recipe. I lessened the amount of water by the amount of extra lemon juice.

Waldorf Salad II

I really liked this. Waldorf salad can be very bland, however the addition of cayenne pepper gave this some real zip. Next time I'll add chicken and have a one dish meal.

Easter Lamb Cake II

I had lost the recipe that came with the cake mold ( I've had it 20 years), so I was pleased to find this. My finished cake was somewhat collapsed in the back, so I may not have got all the air bubbles out. I put nutmeg in batter and glazed it and put coconut on it with Jelly bean eyes. It made a great center piece for my Easter table.

Fruit-Nut Gelatin Salad

Very easy and the nuts and celery give it a nice chewy texture. If I did it again I think I wouldn't add the cream. With the cream cheese it is rich enough. I'm sure some juice (orange or pineapple would make this lighter. I used sugar free Jello.

Easy Marinated Pork Tenderloin

This was very good. The soy sauce gave a very good flavor to the pork and kept it very juicy and tender. My track record with tenderloins has not been very good. They have always turned out too dry with very little flavor. It was very easy to do, but you do need to marinate several hours. I did mine 4 hours. I'm sure this would also taste good on the grill.

Pepper Jelly Appetizer

Just made this for St. Patty's day ( the jalapeno jelly was green) and served it with Triscuts. Everyone ended up gathered around this dish and were almost too full to eat dinner. This couldn't be easier and, it is so good.

Celery Seed Slaw

If you like sweet slaw, you will love this. Very easy, but be sure you make it a day ahead so it can spend all night in the fridge. I used a packaged cole slaw mix and added the peppers.

Bananas 'N' Cream Bundt Cake

This is really good. The bananas make it very moist, and it has a light texture unlike banana nut bread. A great use for bananas that aren't going to last much longer.

Layered Chicken and Black Bean Enchilada Casserole

Glazed Lemon Bundt Cake

This tuned out so well. Following other reviewers advice, I replaced the milk and lemon extract with a cup of fresh lemon juice ( I was given a bowl full of lemons ). I also used sugar to replace the flour for preping my bundt pan. The cake came out of the pan already glazed with sugar. It was beautiful and very lemony.

Chili With Pulled Beef & Pork for a Crowd

I made this for New Years eve and everyone really liked it, but I did add cayenne to it until it had some real bite. It is more work than the usual recipe, but with extra heat it is really good.
