Pasta Primavera with Italian Turkey Sausage

I added extra red pepper and mushrooms and omitted the tomatoes. The leftovers were great the next day too!

Italian Sausage Soup II

I added 1/2 cup dry white wine and some fresh spinach to the soup and it tasted great. Everyone went back for seconds!

Open-Faced Broiled Roast Beef Sandwich

A very easy and quick weeknight dinner served with a garden salad. I used horseradish mustard for a little kick and would recommend broiling the sandwiches for a little longer than the 2-4 minutes, especially if all of your ingredients came straight from the fridge.
