Apple Pumpkin Muffins
these are delicious! I had some old apples to use up so I did a search for apple muffins. I stuck to the recipe but used whole wheat flour, applesauce instead of the oil, and 1 cup of splenda sugar, 1 cup of regular brown sugar. I did not add the streusel because I am watching calories and fat. I made 21 small muffins (which took 20 minutes to bake) and 1 mini loaf of bread (which took about 35) delish!

Black Bean and Salsa Soup
This recipe was super easy and very tasty. I did make some adjustments though. I used dried beans instead of canned. I blended 2 cups in the blender and left one cup unblended. I sauteed half a red onion, 1 jalapeno, and 4 cloves of minced garlic and added that to blender along with the salsa and 2 tablespoons of cumin. i also added 1/4 of a teaspoon of chili powder. I cooked it for about 20 minutes letting it get thicker. I put 1/4 cup of brown rice in the bottom of the bowl, piled on the black bean soup and topped it off with cheddar cheese, a dollop of sour cream a tablespoon of corn, a tablespoon cilantro and a tablespoon of green onion. Lets not forget the avocado! Delish!

Jalapeno Popper Spread
This was so delicious! I used 6 fresh diced jalapenos and a 8oz can of green chilis. It was so tasty and satisfying! I also put bread crumbs on the top with some chedder cheese. I personally dont think it needed the extra cheese because I couldn't really taste it. I brought some of the leftovers to lunch today and my coworkers shared a small piece of heaven with me! word to the wise, when chopping jalapenos where gloves! my hands were on fire all night and today :(
