My favorite family cooking traditions
A lot of my family cooking traditions have changed due to my mother, brother and myself developing a gluten allergy. Mexican is always a favorite in our house because most recipes are gluten free, easy to make, cheap and tasty.
My cooking triumphs
Last night, these amazing fish tacos. It was my first time trying the recipe and was hosting a party - everyone LOVED the food! It was a huge success.
My cooking tragedies
WAY before Jessica Simpson confused tuna with chicken because it was labeled in a "chicken of the sea" can, I cooked a chicken pot pie with tuna because I misread the label and thought the can of tuna was actually chicken. GROSS!

Grilled Shrimp Tacos
Lots of delicious fresh flavor! I actually kept the shrimp on the skewers and served with flank steak and mole.

Spanish Rice II
Super yummy! I've never tried making my own spanish rice before - but this was simple and delicious. I actually simplified this recipe even more by using a rice cooker. I omitted the fresh onion and instead used 1 TBSP onion flakes. I also substituted the green bell pepper, can diced tomatoes, and green chiles for 1 (7 oz) can of casera. Last, I substituted the 2 cups water for 2 cups chicken stock.
