Alaska Salmon Bake with Pecan Crunch Coating

I have made this recipe several times as stated. We really enjoy it. The other night I pulled out the salmon to defrost. To my surprise; no dijon or breadcrumbs. No problem, I subbed ranch dressing and ritz crackers. Cooked for 8 minutes as they were thinner fillets and what a delicious twist to this already great salmon dish. My BF and I like variety and that opps turned out perfect. It may always look like the same dish but a nice surprise when you take a bite. This is my fav way to do salmon. Next I will try the same prep for chicken.

Baked Pork Chops I

This was some pretty good stuff. I am not a big fan of cream of whatever as I have gotten older. This was a simple quick meal. I followed everything to a T except I forgot to flour the chops and mine did not take the stated 1 and a half hours to cook. Total time took 30 to bake and 15 with the sauce/gravy. I ran out of time to cook so I pulled the pan out and set it on the burner (from my corn) for a few minutes and let the sauce get all bubbly. The taste was right on for an easy cook meal. Thank you.

Quick Poached Salmon with Dill Mustard Sauce

I have never poached anything and this recipe was the easiest. I made the recipe as stated with everything but the dijon mustard which I was out of. I used regular mustard instead, it was good but probably will not make that substitute again. The salmon was pretty good by itself and the sauce was ok on its own. But together the pair are great. This sauce does make a lot. I tried the sauce the next day with a lemon garlic chicken I made. I think all the lemon in both recipes made the flavors clash. Overall this was a good quick and easy meal I will probably make again for my boyfriend as he loved it but this time with the right mustard.

Baby Back Ribs

This recipe was excellent with the rub suggested by Cathy M. The butcher had fresh beef short ribs but I look forward to the next time with the smaller pork ribs.

Baked Salmon II

For myself I did not like this recipe as stated. I needed some crunch to the dish as the fish was way to mushy. I made with pasta shells and green beans. It did taste ok and was easy but the meal for me was mush. My boyfriend on the other hand loved it. He rarely goes back for seconds and hates leftovers. For him this dish was the ticket as he had 2 pieces plus ate the leftovers the very next day. I made the recipe as stated except I used 4 filets instead of 2. I will make again only because he liked but next time i'll broil it or pan fry to get a bit crispier texture for my taste. Thank you for a winner with the BF.

Slow Cooker Roast Beef

I put this on last night before I went to bed. This morning I tasted a piece and let it cook till lunch hoping that it would get better. I made the recipe as stated and added potatos and carrots this morning. Though the meat did fall apart, it failed to deliver any kind of taste other than blah. Had I got it from a buffet I would not have eaten it past the first bite. It was not salty as other reviewers experienced. I will try leftovers tomorrow and make gravy this time. Hopefully it will be better after sitting in the fridge. Otherwise a bottle of BBQ sauce will cover so I don't waste the meat.

Garlic Mashed Red Potatoes

I too had high expectations of this recipe with the high rating and all. I made the recipe as stated and did not tweak anything. The taste just did not deliver. Hopefully gravy will revive the leftovers.

Broccoli Rice Casserole

This was just the recipe I was looking for. Even my picky eaters went back for more. The only thing I did different from the recipe is season the brocolli and rice as it was cooking and I omitted the celery. I only made 5 servings but will still have leftovers and plenty to freeze for another meal.

Chocolate Caramel Nut Cake

I am not a sweets eater but I made this for my boyfriend and he loved it. I really enjoyed it as well with a side of ice cream. I made this recipe as stated but only put light walnuts across the top due to some not caring for walnuts. My favorite part was the gooey carmel that cooked on the edge pieces. I will definitly make again but next time make 2 small cakes and take one into the office.

Slow Cooker Ham

This is my favorite way to make ham using the brown sugar. Mine varies a little though as I add Coke and cook mine in the oven. I will try the crock pot next time. The best ham I made was made with flat (no fiz) coke and I cooked it on 250 in the oven for 8 hours. This ham was fall off the bone delicious. I usually cook it and go to bed but basting ocasionally would be best. The darker the meat the better, so full of flavor. My entire family loves when I make this.

The Best Chicken Fried Steak

This recipe is awesome! My family loved it. To fix the buttermilk dilemma some reviews have mentioned, try this: to make substitute buttermilk, add 1-3/4 tablespoons of cream of tartar to a cup of milk, or add a tablespoon of lemon juice or white vinegar to a cup of milk and let it stand for 5 to 10 minutes. In many baking recipes, you can also just use plain yogurt or sour cream instead of buttermilk. I use the vinegar method but the rest are good to know. I never buy buttermilk anymore because I never use the whole carton. Buttermilk is one of those where I could have it for weeks then not need it, as soon as it goes bad I need it. This is handy to keep in your box for any recipe calling for buttermilk, when in a pinch use a substitute.

Fish Tacos

This is the best beer batter. I have made it twice and everyone loves it. The first time I said we were having fish I heard groans and i'm not hungry. After trying everyone enjoyed and the four of us polished of over a pound of catfish. Awesome and easy.

Taco Salad III

This has been a favorite of mine since I was a child. I now make it for my kids and they love it. I do not mix the ingredients which allows everyone to make their own personal salad. My chip of choice for this salad is original doritos. YUMMY!

Funnel Cakes

Just like the fair! Any time I am at a place that sells funnel cakes I must have one! -- And I don't share!! Good thing I am only around these places about every other year. And at $5 a pop and every delectable calorie, these are a rare treat. Thank you Tarmia for the recipe. We don't eat out often but my kids constantly ask for 'any specific resturaunt joint.' It is nice to have a few special recipes in the bag, like this one, that my kids can request. Though not the healthiest (since I stock every item needed to make this recipe year round) but it is wonderful to have once or twice a year at home as a treat. I will never spend fair prices again. Thank you!!!
