Downeast Maine Pumpkin Bread
I made this pumpkin bread exactly according to the recipe, and it was great. It reminded me so much of the pumpkin bread at Starbucks that I ended up making an extra batch and freezing it so that I won't have to spend money for a treat. When I took the bread to a special breakfast at work, I served it with whipped cream, but I think that next time I might use cream cheese frosting. For home, it's perfect plain, no topping needed.

Roasted Red Potato Salad
I made this for a pot luck, and it was a huge hit. It would have been absolutely fabulous made exactly like the recipe, but I did a few things differently. First, I omitted the hard boiled eggs and bacon. I substituted green onion for the medium onion. Also, when I roasted my potatoes, instead of just using a greased pan, I tossed them in a little olive oil and garlic. When I put everything together, I added just a splash of vinegar. Also, I was concerned that omitting the eggs and bacon cost me a couple of servings, so I bulked up the salad with some fresh broccoli. I didn't change the amount of mayo, and it worked out perfectly. I got a a ton of compliments.

Party Pinwheels
These pinwheels are FANTASTIC! I warn you, do not make them unless you have a full stomach. Otherwise, you'll end up eating the whole batch! :) The only thing I changed was that I used a can of diced black olives instead of sliced. Also, yes the filling is salty. But it's a treat or something special for a party, not something you're going to be making every day.
