Roasted Red Potato Salad
I made this for a pot luck, and it was a huge hit. It would have been absolutely fabulous made exactly like the recipe, but I did a few things differently. First, I omitted the hard boiled eggs and bacon. I substituted green onion for the medium onion. Also, when I roasted my potatoes, instead of just using a greased pan, I tossed them in a little olive oil and garlic. When I put everything together, I added just a splash of vinegar.
Also, I was concerned that omitting the eggs and bacon cost me a couple of servings, so I bulked up the salad with some fresh broccoli. I didn't change the amount of mayo, and it worked out perfectly. I got a a ton of compliments.
