My cooking tragedies
Thanksgiving 2008. My mother fell sick and could not finish cooking her Thanksgiving dinner so she asked me for some help with no time to really prepare. So any way, I decided to multi-task and do the mashed potatoes, make a salad and do some corn. I thought if I did the potatoes first I would have time to do the other task. I chose to chop the potatoes small so they would cook faster and everything would be done on time. By the time I got done with the salad and the corn I realized that I had choped the potatoes smaller to cook quicker. By the time I checked the potatoes they had turned to soup. So to save the grace of the potatoes I ran to the grocery store and grabbed a box of instant potatoes and added about a cup of them to my potato soup and the potatoes turned out okay.

Spinach Stuffed Chicken Breast
This recipe is "OMG" the best! I have tried other recipes on this site and they have turned out okay, but this one has been the best by far. I did change one little thing though, I used collard greens instead of spinach. My whole family loved it, from my husband to my 13mo. old son. I wouldn't change anything about this recipe. I only changed the spinach because my family perfers collard greens over spinach.
