About this Cook
I am newly married and love cooking for my husband. I have cooked for very large groups and now just for two. I love spending the weekends in the kitchen, much to the dismay of my new husband.
My favorite things to cook
Rice and beans (I lived in Mexico and Guatemala for almost 2 years), salsa, tostones, casseroles, bierocks, chocolate chip cookies, rolls and anything that makes my husband happy!
My favorite family cooking traditions
Making "skinny pancakes"...a.k.a. swedish pancakes or crepes. My grandpa still makes this in his 80's for us when we visit and my mom always made them. Bierocks are also something that my mother used to make and I am trying to perfect them as well...they are budget friendly and so good! My husband and I's new tradition is quickly becoming to make traditional Mexican salsa...takes a lot of time in the kitchen but we love it!
My cooking triumphs
The first time I made the bierocks by myself...the first few were rough but after some practice, they looked great! I consider that a triumph.
My cooking tragedies
One day, I put a pot of black beans on the stove. A couple hours later when I started to comment on the smell and wonder who in our apartment complex was burning something my husband went to investigate. As soon as he walked by the kitchen, he said "umm...honey?" It all the sudden came to me, I cursed and ran to try to fix it. They were chargrilled beans.

Roasted Cajun Potatoes
these potatoes were delicious!!! we loved them and couldnt stop eating them. they have a bit of a bite but we love that! thanks for the recipe!

Black Bean Spinach Pizza
this pizza was fantastic! we loved it! we did make a few changes but only due to what we had in our kitchen... instead of the salsa, we used diced tomatoes; instead of onion, we used green onion; and instead of frozen spinach, we used fresh spinach. we also used fresh mushrooms and sauteed the mushroom, spinach and garlic before putting it on the pizza. the taste was really really great and i know that we will make this again! thanks for the recipe!

Bacon and Potato Soup
this soup was so good! after reading the reviews, i was a little skeptical but wanted to give it a try. i followed the others advice and changed 1 c. of the broth to 1 c. of milk for the creamy factor, put in 1/2 tsp of the cayenne pepper, added a little more cheese and added broccoli for more veggies. i want to make it again tonite!
