Vegetarian Chili
I really liked this recipe, it's quick and simple to make, especially on a cool Chicago night. Changes I'll make the 2nd time around will include cooking the onion & zucchini a few minutes before adding the other ingredients; and adding Cayanne to kick up the heat. All in all this chili is quick, healthy, and worth remaking.
