Mediterranean Stuffed Chicken
We rolled the stuffed chicken breasts in panko crumbs before cooking and served on brown rice. Needed to cook a little longer than 20 minutes (about 30 minutes)and was perfect. Thanks for a great recipe!

Roasted Beet, Peach and Goat Cheese Salad
Our little market didn't have mache, walnut oil, or pistachio nuts so I substituted a mixture of arugula, butter and red leaf lettuce, used olive oil, and raw almonds. The beets, peaches and goat cheese really make this salad wonderful. Thanks for a great recipe!

Scalloped Potatoes and Onions
Wonderful! I didn't have chicken stock on hand so used vegetable stock and was excellent. Also increased recipe to 150% and put in 9x13 glass casserole. Cooked in same amount of time. Great creamy potato recipe without all that fat. Thanks so much
