Easy Sugar Cookies

Holy these are tasty!! Sugar cookies have always been my downfall, but these are GREAT!! Lightly crispy around the edges, soft and chewy center. And not bland at all! They are soooo tasty! I halved the recipe, but still used one whole egg (hoping to make them a bit fluffy rather than all crispy-success!). My husband is going back for more--I'm right behind him!

Simple White Cake

This made awesome cupcakes!! It was not dense at all--nice and fluffy!! I made sure the cream the butter/sugar really well and then beat the eggs in like crazy. I didn't do 8-10 min as previous review suggested... probably 2min on the butter/sugar and 2-3 minutes on the egg. I frosted them with the Chocolate Frosting II recipe from this site. GREAT!!

Alice Chicken

Love this chicken! All I had was reg. cheddar cheese, so that's what I used but it was delicious :) I sauteed the mushrooms (also added onions) in the same pan as the bacon (after dumping grease) and it was a great flavor meld. I have never broiled chicken before, so I was nervous. It really did not seem like it was cooking!!! But it definitely did(followed the 8-9 min. recommendation)--and so tender and moist. Quick, easy, supa tasty!

Peanut Butter Cupcakes

AWESOME!!! I came down with a horrible cupcake craving and found this recipe--soooo glad I tried it!! In fact, I'm eating my second one right now and had to pause to enjoy the last bites :) I used previous reviewers comments and used lemon juice and oil (in lieu of cream of tartar and shortening, because I had niether). I used natural peanut butter, because that's all I have. I used the chocolate frosting (II? I think) recipe from this site and it is a perfect pair :) Accidentally added too much vanilla, but it did not seem to alter the peanut buttery taste. My only complaint was my own fault--I baked them just a couple of minutes too long so they were not quite as moist as I would have liked them to be. Though not quite dry--but borderline. My husband and I both love these--will make again!

Walnut Pumpkin Pie

This was AWESOME! I used 2 eggs instead of one, 3 tbs. pumpkin pie spice(instead of separate spices) and added extra cinnamon. I did use Eagle brand condensed milk as suggested on another recipe. Don't know what difference that made, but it sure turned out delicious! I also used extra brown sugar in the topping, and used an unbaked pastry pie crust instead of the graham cracker crust. Everyone loved it and I will be making it every year (and in between holidays, too!).
