I use no meat for some of these, add bell peppers strips to others, and use ham for others. I get many compliments and everybody gets it the way they like it.

Must read notes... The oil will decrease in temp for every batch so make sure to allow it to heat back up before the next batch. If it's too hot the chips will burn quickly. If it's not hot enough or you haven't left the chips in long enough they will be rubbery when serving. After adding the tortillas wait for the bubbles in the oil to subside to almost nothing and I have perfect chips every time.

Since I had most of the ingredients I thought I'd give this recipe a try. I didn't have any bread crumbs but I did have some shredded mozzarella cheese so I threw that in with the rest of the cheeses. I loved this dish and will make it again. I also added a dash of sour cream when I ate my second helping. It was great.
