Gorgonzola Pear Pasta

I was hesitant to try this...sounds like something out of Princess Diaries :). I was pleasantly surprised to find that it was quite good, definitely a break from pasta with butter, salt, sauce and Parmesan. Will make occasionally.

Corn Fritters

YUM! Any easy. I don't ever deep fry, but this seemed like a fun treat as a side dish. My whole family loved them. My kids were amazed to watch the balls of goo turn into crispy treats! Thanks!

Spanish Potato Omelet

I was looking for directions on how to make a Spanish Omelet, and this one fit the bill. My Spanish exchange student made one for us, and I couldn't recall exactly how she did it. This recipe refreshed my memory. This was good, but only 4 stars bc not as fantastic as the one I had before. I think she used fewer potatoes and more eggs. She cut them up into cubes and cooked them with a little water in the microwave first to speed things up. I did that too, and did not make them crispy as the recipe states. I also used more eggs...I ended up using 7 eggs for 2 adults and 3 kids and we ate it all. I did not use the tomato or green onions. It was good and we enjoyed it. I'll just use less potatoes next time. I think this is an authentic recipe...it's just up to individual tastes as to how much and what kind of veggies to include. Thanks!

Addictive Sweet Potato Burritos

These were a great no-meat burrito with plenty of flavor. My kids (12, 9 and 7) even surprised me by liking it. I followed the recipe with the exceptions listed below.I added more cheese than called for (I always do in Mexican dishes). All of the following changes were suggested by other reviewers: I used all black beans, as well as heating the powdered spices in the skillet for a few minutes to release their flavors. Mashing the beans in the skillet with a potato masher makes the job easy. I also made it as a casserole (seemed easier), and reduced the liquid by half. I think next time I'll keep the casserole format, but increase the liquid to the full amount just to see what happens. It was a little dry.

I don't love buffalo chicken, but this was easy, easy, easy. And my husband and 12 year old daugther love buffalo chicken, and they did love this. They'd probably give it a 5.

Cocoa Yogurt Parfaits

Granted, I wouldn't serve this as a company dessert, but for my kids and I as a mid morning snack, it rocks! We used half lemon and half vanilla yogurt and fresh raspberries. It was fun and easy to make with my 7 year old. I found it a bit tart, but still delicious. Will try again with other flavor and fruit combos. My oldest (12) says to use granola instead of cocoa krispies if we serve it to company :).I liked the chocolate.

This was quite good. I used only about 1/4 tsp pepper as per other reviewer's suggestions. It got a little dry, but I was messing with my broiler setting and think I just left it in a little too long. Will try again.

Garlic Bread Fantastique

Yum. This is so great. Just be careful not to burn it. 4 minutes under my broiler was almost too much. It would be a shame to ruin such great bread! Caution: be sure your butter is soft enough so you can really blend all the ingredients well.

Chicken Soup With Black Beans and Corn

Wonderful soup. The only chicken in the house was sliced deli meat,so I sliced up about 5 oz of it and used it in the stock recipe. No carcass available, so I skipped that part. Also used 8 chicken bullion cubes instead of chicken broth. I pretty much just put all the ingredients in the pot for the stock and the soup at once and simmered for a while. Served with tortilla chips and Monteray Jack cheese (didn't have a lime). Fabulous. This makes a LOT of soup...I'd say way more than the stated 8 servings. But hey, I love frozen leftovers for another day...:)

Camp David Spaghetti with Italian Sausage

This was extremely good. I served it to company with a green salad and some nice white bakery bread. I took the easy way out and added the sausage back into the sauce and just put Parmesan on the table for people to add on their own. As written, the presentation would be much more impressive, but this was simple and just as good.
