About this Cook
My favorite things to cook
I absolutely love opening up the fridge and seeing what I can whip up using leftovers. Sometimes the result is better than the original!
My cooking triumphs
I invited my boss over for dinner and had assembled the lasagna the night before so I could just pop it in the oven. I forgot to check the oven temp and discovered I had been cooking it at 200 degrees instead of something much higher. I turned up the temp and served it after it had browned. IT WAS THE BEST I HAVE EVER HAD, I'm sure the slow cooking helped a lot, not to mention overnight assembly.
My cooking tragedies
I made pinwheels using cream cheese and chopped veggies... I lathered on the cream cheese and discovered that too much cream cheese makes me nauseous. LOL!

Terry's Texas Pinto Beans
I made these for my husband who had never had pinto beans as the main dish before and is a big meat eater. HE LOVED THEM! When I was a kid, my Texan step dad showed my mom how to make beans but hers were always fairly bland. This recipe is so tasty. Yummmm!

Sweet and Sour Meatballs I
We thought it was just a bit too sweet. I doubled the original sauce recipe for a 40 oz bag of frozen meatballs and it was the correct amount of sauce for the number of meatballs. I added 8 oz of Sweet Baby Ray's buffalo wing sauce and it made the sauce less sweet & more spicy. We loved it!
