About this Cook
Married since 1999 to an amazing man. Together we have 4 children, 3 boys and one girl. I haved lived in Manitoba, New Zealand, Wisconsin, and Minnesota. I am a stay at home mom, and also work part-time for a local county program for low-income families. My husband is a school teacher and we live on tight budget. Therefore, cooking at home is a way of life! McDonald's? Not for our young family!
My favorite things to cook
Don't like to bake things twice unless it's amazing! Love to try to new recipes. My kids are always wondering what mom is making for supper today! I especially like to cook ethnic foods like Thai and original Mexican recipes. I grew up on Mennonite food so I still crave those staples at times.
My cooking tragedies
Making grilled cheese sandwiches with the butter on the outside of the bread instead of the inside... while pregnant. Making my first pie when I was first married... and not baking the crust... for guests (one being my mother-in-law who is an amazing pie chef!!)

Whole Wheat Banana Nut Bread
I was skeptical to try another banana bread with whole wheat flour ince I don't usually like the flavor, this bread turned out really moist and flavourful! For more moisture, I simply added 2/3 c. oil instead of the 1/3 c., as well as 3/4 c. honey. Next time I would substitute for applesauce to make it extra healthy. My little kids loved this bread in spite of it being "healthy". I still like my traditional banana bread recipe but this one gets 5 stars for being tasteful with all the good for you ingredients!

Strawberry Cheesecake Muffins
Nice quick recipe with on-hand ingredients! I whipped this one up real quick when I had sudden company coming with coffee. Next time, I would: add simple cinnamon & sugar topping, or a crumb topping for more flavor. I'd use 6 oz. of cream cheese, and a generous tablespoon of jam instead of a teaspoon. These muffins aren't overly sweet, which I like! Otherwise, excellent!

Black Beans and Rice
The best beans and rice recipe I have tried yet. We joke that we are on "the Dave Ramsey beans and rice diet" to get out of debt in this economy. This recipe is a keeper, and a welcome change from boring beans and rice! Thanks, Robyn.
