Cream Cheese Coffee Cake II

I've made this cake several times and it's delightful. Moist & flavorful and a breeze to make. I use a 250g pkg of cream cheese and I omit the walnut topping simply because my family isn't crazy for walnuts. I also sprinkle a light dusting of icing sugar over the cake JUST before serving. Thanks for sharing!

Salmon with Lemon and Dill

Super delicious ~ I used fresh Coho salmon and 1 clove of minced garlic instead of garlic powder. I omitted the salt ~ not needed. Served with basmati rice and vegies. Drizzed the lemon & garlic sauce over the rice. This recipe is a keeper!

One Bowl Brownies

Totally stuck in pan even after following handy hints from others. What I was able to retrieve was dry and tasteless. I was embarrassed to serve to my father-in-law. Won't make these again. Sorry...

Joey's Peanut Butter Cookies

WOW! I added 1/2 cup peanut butter chips to this recipe. I didn't bother rolling the batter into little balls. Just spooned it onto the cookie sheets lined with parchment paper. Batter is very moist. 350 degrees for about 13 minutes. Watch to avoid burning. Moist, chewy ~ exceptionally better than store bought or any restaurant. Thanks for sharing!!

Mediterranean Greek Salad

I was very happy with this recipe. Simple, colorful and really zippy. It would definitely benefit from marinating longer. I had leftovers, so I'm anxious to see what this salad tastes like after the extra marinating time. We love sun dried tomatoes so we added extra of those plus a little bit of olive oil. Thanks for sharing this recipe!

Mincemeat Crumb Bars

A wonderful alternative to date squares! Absolutely DO NOT add the additional iced topping as suggested!! These mincemeat goodies are plenty sweet. Adding the extra icing would just ruin them.

Cheese Biscuits II

I really loved this recipe. I added 1/4 cup parmesan cheese, 1 tsp each of basil & parsley. I would cut back on the flour tho'. 1-3/4 cups would be plenty. I also sautéed 1 small onion and 3 cloves of garlic and added that in as the last ingredient. It rolled well and 10 minutes was plenty for baking! I didn't add pimento or pepper because I didn't have them on hand. These are genuine homemade biscuits!

Crackle Top Molasses Cookies

Just like the Starbucks Ginger cookies! I used 1/3 cup molasses + 1/2 tsp allspice. I also made sure to flatten them before baking because my "test batch" didn't flatten like I expected them to. 2 cups of flour is plenty ~ next time I make them I'll use only 1 3/4 cups. I had to really work the dough with 2 cups of flour. 12 minutes of baking at most ~ watch cookies carefully! A delicious super spicy cookie! Soft & chewy inside and crunchy edges!

Rhubarb Cake I

Super delicious & moist. Very easy to make. I used 4 cups of rhubarb and baked this cake for an extra 10 minutes...lots of rhubarb! I also thought 1 cup of brown sugar for the topping was too much. I only used 2/3 cup instead. I didn't have any buttermilk so I substituted milk + lemon juice...for 10 minutes. The sweet & tart flavours of this cake are superb!

Mocha Chocolate Chip Banana Muffins

These are fantastic! I used 2 tbsp Maxwell House Orange Capuccino Instant Coffee & 2 tbsp Kahula instead of regular instant coffee and water. Adds an extra zip to these already delicious muffins! My husband says they have a real kick to them!

Apricot Glazed Carrots

What a great way for my daughter to eat her carrots! Not too sweet, not too spicy. I left out the orange zest, as I didn't have any on hand. I made sure to not overcook the carrots ~ a little bit of a crunch to them. Otherwise, I think the marinate would make them soggy. Second helpings of this vegetable!

Creamy Spinach Tortellini

Super easy to make ~ quite delicious! Both my husband and I enjoyed it but we felt that it was quite filling and felt a little guilty while eating it! Heavy on the calories! Nice for a treat tho'. The cherry tomatoes really added tons of flavor and color. The highlight of this dish. I used a whole large bag of fresh spinach instead of frozen spinach. I'd make it again however next time I think I'd use low fat yogurt.

Chickpeas in Tomato Sauce With Feta and Wine

This dish lacks color and flavor. I would suggest using some frozen corn for color & flavor as well as well as extra spices. I would also suggest more feta cheese as well as perhaps some red pepper. I served this with whole wheat spaghettini and topped with grated parmesan cheese.

Pistachio Crusted Chicken

Instead of chicken strips, I cut the chicken into nugget sizes. Shelling the pistachios was a bit time consuming, but totally worth it! I sprinkled the extra crumbs over the chicken before baking it and it made the dish extra crunchy. Delicious! Great leftovers too!
