Venison-Bacon White Chili
I would really love to give this recipe 5 stars, because it was absolutely amazing - but the 4 teaspoons of salt prevents me from doing so. Since I am trying to stick with south beach diet guidelines, as much as possible, I made the following modifications. I left out the salt, smart balance instead of butter, whole wheat flour, turkey bacon instead of regular, venison stew meat instead of ground (because I didnt' have the ground), and brown sugar w/splenda. Also because of my own personal preference I used diced chlies instead of whole, and only 1/2 tsp cayenne pepper. This is my favorite chili by far!

Couscous Feta Salad
I found this recipe when I was looking for side dishes that I could eat while on the South Beach Diet. I have been making this for several months and even my two year old asks for second helpings. Two things that make this a little easier are 1) If you don't have time to let the couscous chill for an hour, make it the night before and then mix it with the other ingredients the next day. 2)Either leave the cucumber out all together, or cut it up and add to individual salads. I find that the leftovers don't keep as well with the cucumber mixed in.

Shredded Venison Sandwiches
My husband and I loved this recipe! I made a few modifications since I am on the South Beach diet. I used reduced-sugar ketchup, brown sugar with Splenda, and two tablespoons of Worcestershire Sauce, rather than two teaspoons. I will definitely make this again!
