I had worked at a slaughter house from the time I was 12 till I joined the service. In the military I was required to cook for 60 portion up 10,000 on a aircraft carrier. Retired, I went to work at the Willamette University in Salem, Oregon. But I was offered a job at the Oregon State maximun security prison, From there I worked at Chemawa Indian High school feeding 400 students daily meals plu snak program and all field tripps

Foods with delicate flavors and a sauce to accompany them. Mixture of different type fresh vegetable. Seafood is a very favorite of mine also.

My cooking tragedies
I was cooking on a amall ship for abpout 60 men and 5 officiers. I had my ovens full of fresh bread and the other oven I had pot roast in baking pans cooking. When the OD who was driving the ship let it sideways into the swells, Everything came of the ovens onto floor. Thought I was going to jail for what I told that Ensign at the wheel.
