About this Cook
I'm a SAHM to a 1 year old, and LOVE baking. I'm a pretty good cook, but my desserts are fab. I always keep a homemade sweet in the house for everyone to snack on.
My favorite things to cook
Baking is my favorite thing to do, but I can really cook anything. From steak to lasagna, I like to do it all so our menu stays varied. I have a toddler, so it's important for me to make him healthy food, but for everyone else, I like to try different types of cuisines- Mexican and Italian are my favorites.
My favorite family cooking traditions
Thanksgiving, I always make the sides and desserts, while my mom makes the turkey. Also, on Christmas, we never make turkey or ham, but like to make something different- it's too close to Thanksgiving to do a huge turkey/ham dinner all over again!
My cooking triumphs
My first attempt at lemon meringue pie came out gorgeous and tasted great- I was seriously scared it would be a disaster, but it was perfect.
My cooking tragedies
My first attempt at key lime pie (one of my favorite desserts) was disgusting- much too tart, and it clumped on me so I had to strain it. Funny enough, every key lime pie after that has been beautiful.

Coconut Cream Pie VI
I had to make changes to this in order for it to have a better flavor: I did NOT add any salt, used 2 cups coconut cream and 1 cup milk, used 1.5 teaspoons coconut extract and 1.5 teaspoons vanilla, added in 1 extra cup of coconut, and used 2 extra tablespoons of cornstarch. With these changes, my pie came out wonderfully flavored and creamy yet stable enough to slice.

Cream Cheese Frosting II
Very good frosting, and mine turned out stiff like in the recipe photo after only being whipped for a short amount of time with a hand mixer. I halved the recipe, but I still used one teaspoon of vanilla, and put in 2 and 1/3 cups sugar. This is a good basic recipe, and went well with my red velvet cupcakes.

Best Ever Chocolate Chip Cookies II
With improvements, this was a 5 star recipe, but written as it is, only about 3 stars. First off, the texture and appearance of these are great without any changes, but the flavor isn't quite there. To make them flavorful, I added a pinch of salt, half a teaspoon of vanilla, half a teaspoon of coconut extract, and a cup of coconut flakes. I also only used one cup of chocolate chips. If you don't want to have coconut flavor in your cookies, leave it out and add one teaspoon of vanilla.
