About this Cook
My husband and I have been living in Central America for 9 years now. We've recently re-located to Panama from Costa Rica. I'm really enjoying Panama, and we are planning to build a new house when we've finished developing our new subdivision on the Azuero Peninsula (Western Pacific side)
My favorite things to cook
Given my life style, I prefer to cook meals that are quick and easy. I do enjoy cooking, but time isn't always a factor for me. We are on the go most of the time.
My favorite family cooking traditions
I Have a number of old time favorite family recipes that I keep with me at all times. However, I'm ready to start experimenting with new things, and living here in Central America poses a big challenge, as the ingredients are not always available in the local super markets.
My cooking triumphs
My husband says I make the best apple pie he's ever had in his life, including his mother's! I enjoy baking, but again, my time is limited and I rarely have the time anymore.
My cooking tragedies
Cooking the beef in Central America! The beef here is extremely tough as they don't age it. We both love beef, but are afraid to buy anything except ground. We've tossed many a steak in the garbage, even after marinating over-night!

Beef Fried Rice
This recipe was quick and easy, and very good. And I'll be making it again. I added some fresh garlic and ginger, and slightly increased the soya sauce, but left everything else the same. Thanks!

Fresh Tortilla Triangles
I tried proudmammaof2's suggestion, sprinkling sugar and cinnamon on the wedged tortillas--but instead of frying, I brushed with extra virgin olive oil and baked at 350 for 10 min. Yummy!

Old Fashioned Oatmeal Cookies III
Great Recipe! Like suggested by another person, I added 1/2 tsp cinnamon. I also reduced the baking time to 10 min as I wanted soft instead of crunchy. A keeper!
