Cucumber Sandwiches III
I'm not quite sure what to rate this because I made many changes to the recipe, but I was very happy with the turn out. Rather than using a salad dressing mix, I bought plain cream cheese and mixed it with oregano, cayenne pepper, garlic powder, pepper, and a bit of salt. I put everything in the fridge overnight so that the herbs would settle in. I also added olive oil so that the cheese was creamy. The day of our party, I spread the cheese on plain white bread and added a few thin cucumber slices. I cut them into quarters and stuck a toothpick in each one. They were very good and very easy to make! As an added plus, you can make these ahead of time as well (at least a few hours ahead of time, not sure about making them a day in advance). Great recipe for an appetizer or finger food. Thanks!
