Corrigan's Minestrone

Reviewed: Dec. 1, 2009
I did cut down on the potatoes, carrots and celery. And cooked the noodles before adding. They still took a lot of liquid but it is a delicious soup. I added green beans and corn but next time I will add spinach. Really good minestrone.

Decadent Peanut Butter Pie

Reviewed: Dec. 1, 2009
This recipe was the best part of Thanksgiving. I didn't change a thing but might only put most of the filling in next time as the fudge sauce leaked out when it sat. Also, the fudge and the peanut butter should be heated before piping on top. I don't recall the recipe saying this. It was so good and a small piece was all that you needed.

Banana Pancakes I

I followed the suggestion of lowering the heat and they came out great! My husband and I loved these pancakes. I will definitely make these again. I put peanut butter on them and ate them that way. So good.

Catfish Cakes

Reviewed: Mar. 20, 2009
Not the tastiest thing I have ever made. It was a lot of work with the cooking of the catfish and then flaking and mixing. I know that sounds like I am whining, but give me a good can of salmon and I am happy. I think the flavor was okay, more onion than I cared for. With all the prep time, I think I will just stick to salmon patties.

Baked Teriyaki Chicken

Reviewed: Jun. 5, 2008
Oh my goodness....this recipe is the best I have ever had. I made it exactly as written and it was fabulous. I did line my baking sheet with foil and it really helped. Next time I will be making the thighs on the grill. Very good. Even my son who loves barbecued things loved this more. It is a keeper and very easy. I did put foil on the pan for the first 30 minutes. Very moist. You will love it.

Tomato Gorgonzola Soup

Reviewed: Jan. 28, 2008
I loved the flavor. My husband did not like it as well and he couldn't get over the color. I thought it looked like pepto bismal but he thought it looked worse. I know I won't make this again.

Szechwan Shrimp

Reviewed: Mar. 22, 2007
I doubled the sauce as other readers suggested. It made plenty. It is an outstanding way to make shrimp. Just spicy enough and then the sweetness comes in to soothe. I love this and will definitely make it again. Even tasted great the next day at work.

Cheesy Tuna Mornay

Reviewed: Sep. 6, 2006
I'm not sure why the recipe only calls for 1/2 cup uncooked pasta. That wouldn't be enough to feed two people. I put in a box of rotini but kept everything else the same. I omitted the peas and corn since my son wouldn't eat it with them included. Everyone really liked this. It reminded me of Tuna Helper but better. I put crushed potato chips on top to add flavor. Very good. Had enough leftover for lunch the next day.

Lemon Square Bars

Reviewed: Jan. 18, 2006
This recipe was very good. I did what others did, decreased butter to 3/4 cup and added almond flavoring. I also squeezed fresh lemon juice and used about 4 of them. It is very lemony tasting and very good. My father loved them.

Breakfast Casserole I

Reviewed: Aug. 1, 2005
Very good dish. I used french bread and only put broccoli on half of it, as per my children. I added chopped onions to the whole thing. When I pulled it out of the refrigerator in the morning, I had my doubts. It looked like a mess. But after baking it, we all changed our minds. It was delicious!!! Even my 13 year old son liked it. And that's something. Very good and easy. I recommend it to everyone.

Pizza On The Grill I

Reviewed: Jun. 24, 2005
Okay, I didn't follow the recipe exactly. I did use a Pillsbury pizza dough but cut it in half and stretched it thin. That turned out great. I used regular pizza sauce plus whatever we felt like eating that night. It turned out to be the best pizza, bar none. It didn't even taste like a pizza you would make at home. It was so good that I am now going to have to make it again. We made it on a charcoal grill and it turned out just fine. I would say that it does take two people to do this, though. My husband held the grill top while I used the spatulas to flip the pizza, put the ingredients on the pizza and then to take it off the grill. But it was a fun thing to do. I will definitely be making this again, probably tomorrow.

Southwestern Style Chalupas

I also followed others suggestions. I added two cans of green chiles, garlic, and used tortillas instead of corn chips. But I used venison instead of pork. It was delicious. My husband was a little leery at first, but really loved it. I also used powdered cumin instead of seed. I will make this again. It does make enough for an army so have lots of friends over.

I made this cake exactly as the recipe stated and it turned out to be the absolute best thing I have ever made. My husband told me not to make it again soon. He ate most of it himself.

Amish Yumazuti

Reviewed: Apr. 5, 2005
I made this for my father while my mother was in the hospital. The main drawing point were the people who said it tasted like hamburger helper only better. He told me that it was the best thing he has ever eaten, (probably not, but it's nice to hear), and that anytime I want to make this, he will be more than happy to eat it. I followed others and used two cans of cream of chicken and diced tomatoes and more cheese. I will definitely make this dish again.

Seafood Lasagna I

Reviewed: Mar. 15, 2005
I also added ingredients that others added like Old Bay, ricotta cheese and red peppers. It was just okay. I really wasn't that impressed with it like I thought I would be. My husband loved it but I don't think I will make it again. It does take a lot of time to make. I did find that my sauce didn't thicken up much until I added the parmesan cheese.

I also added the 4 tablespoons of water and they turned out great. They aren't too sweet and they cut nicely. Very easy to make, too. I will definitely make these again. They pack very well in school sack lunches.

I can only repeat what everyone else said about this cake. It is divine! My husband thought it was too sweet but I didn't agree. Served with vanilla ice cream and a big glass of cold milk, it is fantastic.

I've made this two times and both times my family loved it. Even those who don't like onions loved it. I think this is one of the best "quiches" I have ever had and will make it often.

Tomato and Basil Quiche

Reviewed: Jul. 12, 2004
I love this recipe. I did make a change, though. I used Roma tomatoes instead of regular tomatoes. The quiche was a little runny and I blame that on the roma's. I will try again with regular tomatoes and I am sure it will be great. I love the flavors of this quiche. It's a great meatless meal that is very satisfying.

Creamy Penne Pasta

Reviewed: Jun. 10, 2004
I really loved this recipe. At first I wasn't too sure about tomatoes and cream cheese. But all the different ingredients really work. I did use canned Italian tomatoes and added onions with the garlic and used the chive and onion cream cheese in the tub. But those were the only changes I made. Oh, I did add fake crab to the mixture and it was so good. I am glad that I overlooked my thinking and made this. I will definitely make it again.
