About this Cook
I started cooking trying to re-create the things that my mother and my aunt (two great Southern cooks) made when I was growing up. I keep branching out to try other cuisines, Mexican and Italian, that I have learned to love as an adult. It makes me mad to buy pre-made, manufactured foods that I know I can make better tasting and cheaper!
My favorite things to cook
Comfort foods - hearty soups, round steak with gravy, roast chicken, grilled steaks, pasta dishes, caseroles.
My favorite family cooking traditions
The Holidays (Thanksgiving, Christmas and New Year's). As a kid, my Big Birthday Dinner was always Round Steak, Gravy, Mashed Potatoes and German Chocolate Cake. All for me!
My cooking triumphs
The Perfect Beef Barley Soup and Fettucine Alfredo with Shrimp (my ex-wife always broke the sauce...) and learning to recognize how things are going to turn out, more or less, before I cook them.
My cooking tragedies
Once ruined a beautiful Seven-Blade Roast.

Slow-Cooked Country Ribs in Gravy
Very nice! I had 2 pounds of boneless beef ribs and put the liquid together as listed. Since I was working with beef, I browned it briefly in a little oil then added the liquid and covered in the Dutch oven on the stove top - simmered for a little more than an hour and they were fantastic! Very tender. Nice flavor. Next time I will substitute brown sugar for the white and maybe double the sauce. For now, I have to go lick the pot!

Crazy Chicken Marinade Grilled Chicken

Rice Salad
Hey Tracey -- this was excellent! I made a couple of minor changes to use up stuff on hand. Used some leftover grilled salmon in place of the tuna and couldn't find the pimento that I know is here someplace... so I used green stuffed olives. Served as a main course on leaves of Romaine like a lettuce wrap and it was fantastic! Thank you, Tracey
