About this Cook
I started cooking trying to re-create the things that my mother and my aunt (two great Southern cooks) made when I was growing up. I keep branching out to try other cuisines, Mexican and Italian, that I have learned to love as an adult. It makes me mad to buy pre-made, manufactured foods that I know I can make better tasting and cheaper!
My favorite things to cook
Comfort foods - hearty soups, round steak with gravy, roast chicken, grilled steaks, pasta dishes, caseroles.
My favorite family cooking traditions
The Holidays (Thanksgiving, Christmas and New Year's). As a kid, my Big Birthday Dinner was always Round Steak, Gravy, Mashed Potatoes and German Chocolate Cake. All for me!
My cooking triumphs
The Perfect Beef Barley Soup and Fettucine Alfredo with Shrimp (my ex-wife always broke the sauce...) and learning to recognize how things are going to turn out, more or less, before I cook them.
My cooking tragedies
Once ruined a beautiful Seven-Blade Roast.

Jeannie's Kickin' Fried Fish
This was just excellent. Never considered bread crumbs before, so this was a nice surprise. The only changes I made was regular bread crumbs, but added in the classic Italian herbs and left out the red pepper flakes (I live with wimps) and it was lovely. Can't imagine any light fish that this wouldn't work with very well. Nice job and thanks for the imagination!

Best Carolina BBQ Meat Sauce
I was thinking about how to use up a pork should roast and thought "pulled pork sandwiches" sounded good, but it is not possible to find "real" Carolina BBQ sauce in California... Certain that AllRecipes would have something, I came across this recipe! Make me think of the very first pulled pork sandwich I ever had more than 50 years ago in Charlotte, NC. Since I share the house with a bunch of Yankees, I did leave out the cayenne. This is the real deal! Thanks, Tripper, great recipe!!! Unfortunately, there is absolutely no way this would ever last a couple of weeks in the 'frig...

Grits and Ham Casserole
Every once and a while, I try to teach my Yankee roommates about the wonder of grits. So when I came across this recipe today with a huge amount of leftover ham, it was time for another lesson! This was really excellent and I can't think of anything to add to it as written. Nice and creamy and delicious. But what could be bad about cheese grits? With ham!
