About this Cook
I'm your basic simple cook. I like the quick and easy things or the slow cooker meals. I don't like foods that come in a box, but my husband does, so I compromise. Not much though. I'd rather have my homemade mac and cheese over Kraft's any day of the week!
My favorite things to cook
I love to cook anything Mexican or Italian. Those are my two favorite types of food. I will try anything that perks my interest though, so I have a wide variety of favorite things.
My favorite family cooking traditions
My grandmother makes the worlds best cheese grits. She's been making them since she was little and it was a recipe handed down through many generations. Now I have it and I would eat it everyday if it weren't so fattening...haha!
My cooking triumphs
Everyone loves my lasagna, enchilada's, fettucini alfredo, as well as my garlic parmesan breaded chicken breasts. I also make a rice dish that has secret ingredients that I may share with you all some day! :)
My cooking tragedies
I completely ruined a beer broiled whole chicken once. It was the most disgusting thing I've ever put in my mouth. I tried to make my own fried rice as well....and the first time was a flop. I have since mastered the fried rice though, but not the chicken. haha!

Cheesy Potatoes
This is VERY good for a microwave recipe!! I did alter the recipe a bit and I didn't measure anything, so I'll just tell you what I put in it. I cut half of the potatoes that it asked for. I just layered the cheese, onion powder, and potatoes as I felt fit. I used about 1/3 c. milk with a couple shakes of Wondra, put the milk mixture in gladware with a lid, shook it up, and poured it all over the potatoes, onion powder, and cheese. This made it very creamy when it came out. I used onion powder instead of chopped onions because my husband hates onions. It turned out perfect and we both loved it. Great idea!

Baked Lemon Chicken
FANTASTIC RECIPE! I often cook for a 17 year old who is extremely picky and only likes chicken. He LOVED this! I cooked it according to the directions stated above, and I will cook this many more times to come! It's THAT good!

Golden Rum Cake
There is only one word for this rum cake....fantastic! It had such great flavor and we ate almost all of it in one setting! The only downfall my cake had was because of me. I'm not used to my oven yet and I overcooked it a bit. It was dry but I poked holes in it for the glaze to soak into. It didn't work all that well, but I will cook it again for the right amount of time for my oven, and I KNOW it will be out of this world. Kudos to the cook who posted this lovely recipe!
