Sweet Potato Corn Bread

Wow this bread was truly amazing. I used whole wheat pastry flour and whole grain corn meal. And a little less oil and a little more sweet potato. It came out super moist. My whole family, including my picky boyfriend loved it. You can't even tell there is sweet potato in it. It does not come out like a traditional corn bread, by more like a hearty bread that could be used for sandwiches.

Zucchini Brownies

They are excellent. A little more cake like than brownie like. They are so good they don't even need the frosting. When I make them I use olive oil, raw sugar and whole grain flours. Very moist and delicious.

Rosemary Roasted Turkey

The rosemary mixture flavors the turkey perfectly and makes an excellent gravy. Turkey comes out very moist. This was my first attempt at making a turkey and it was wonderful.

Ranch Dressing II

This makes the best ranch dressing I have ever made. I always use plain yogurt in the place of the mayonnaise and sour cream. Excellent flavor. I don't like store bought ranch, but I love this one.

Perfect Pumpkin Pie

Very easy, truly perfect pumpkin pie. I buy organic sweetened condensed milk to avoid all of the preservatives and nasty ingredients of regular condensed milk. I also make my own crust out of oats and the seeds from the pumpkin I bake. This is a fool proof recipe.

Basic Crepes

This is the best crepe recipe I've tried. Each batch makes about 9 crepes. Each time I make them I use a different blend of whole grain flours, and they always turn out great. This time I used oat, corn, brown rice and sorghum flours. They were very light, and you wouldn't even know it wasn't white flour. I eat them with ham and cheese and they are truly amazing!

Bread Pudding III

This is a really simple yet fantastic recipe! I doubled the cinnamon and added extra nutmeg as well. I also left out the raisins, since I didn't have any, and used a peach instead! I reduced the sugar to 1/2 cup and it was still sweet enough. For the bread I used challah, which seemed perfect. Very good recipe, highly recommended.

Wild Rice Pancakes

Gingerbread Waffles

These were delicious. The batter tastes exactly like gingerbread! I reduced the sugar and the molasses to 3 tbsp each, because I like to have syrup on my waffles, and these would have been too sweet with syrup has I not reduced the sugar. You could probably eliminate the sugar all together and just use the molasses, because they were still very sweet even with the reduction.

Spinach Cantaloupe Salad with Mint

This was a very good salad. I love the minty flavor. I did make my own mint jelly, because all of the ones in the store were either made with corn syrup or high fructose corn syrup. Not something I wanted in my salad. I mixed the mint jelly with apple butter for this recipe.

Pear Honey Cranberry Sauce

Am I the only person who eat cranberry sauce when it's not fall or winter?? :) This was very good. I added a dash of cinnamon. And I did not have any lemon zest so I doubled up on the lemon juice. I also used raw sugar. I boiled the cranberries for 15-20 minutes to get a thicker sauce. I have tried many different cranberry sauce recipes over the years, and this one is my favorite so far.

Big Al's K.C. Bar-B-Q Sauce

This recipe really is as good as everyone says. I reduced the recipe by 4, and this made plenty of sauce, enough to fill a 16 oz bottle. The only changes I made were in eliminating 1 tbsp sugar (I used raw sugar), and by adding 1/4 tsp mustard powder and a dash of allspice. I didn't have celery seed, so I left it out. I also used organic ketchup, which I feel gives it a better flavor, as it is made with raw sugar instead of high fructose corn syrup. I have used the recipe as a dipping sauce for grilled steak and also on bbq chicken pizza. The sauce was amazing in both cases. The sauce was so good that I am now making another batch to use on baby back ribs.

Big Soft Ginger Cookies

These cookies have the best taste and the best texture. They are truly amazing! I ate half the batch right after taking them out of the over! They really are too good to resist! I can't wait to make them again!
