About this Cook
I am a full-time paralegal and pre-law student, so it is very difficult for me to find time to cook. When I have time to cook, I never cook for myself. I always go to my parent's home and cook for them. My parents are traditional Mexicans, so mostly everything they cook is Mexican/Spanish food. It usually gets boring,so I like to make new food from different cultures to spice it up a bit for them. Although I don't cook as much as I would love to, when I do cook, everyone rants and raves about it.

I like to cook anything that is flavorful and fun.

I am Mexican American, so I would have to say that I can just about cook any Mexican dish.
My cooking triumphs
Everyone loves my Garlic, Shallots and Paprika scallops!!! My Cran-Apple pork chops are also very good!

To Die For Fettuccine Alfredo
It was a pretty easy dish to make. I made it for my family and they really liked it. Next time I'll add more heavy whipping cream to make it more saucy and add some shrimp for more flavor.

Creamy Twice-Baked Potatoes
I made these for my family tonight and they thought they were AWESOME!!! Although very fattening, I also loved them! I will def make them again. :)
