Baingan Bharta (Eggplant Curry)

This was a very bland meal, and I followed the recipe exactly. I love Indian food and seem to be trying all of the local Indian restaurants around as well. I'm a very experienced cook, so it isn't like a rookie was giving this a go. It could have to do with the cooking on high heat for 10 minutes, because it left a nice burned bottom on my pan. Anyway, won't be cooking this again, sorry Yakuta.

White Sauce

This is a great and easy base. I use it often as we cook at home daily. I've made alfredo sauce, macaroni and cheese, an herb and garlic sauce--very versatile.

Artichoke Spinach Lasagna

My husband made this when a few friends came over and they absolutely loved it too, even after initially complaining about our lack of meat. It was so delicious and very filling. Good balance of cheese and sauce. It even opened my husband up a little more to feta, which has been a tough transition for him. Poor guy, didn't know what he was missing.

Grandma's Corn Stew

I used ground veggie protein in substitution of meat and it was still tasty. A little too sweet, next time I might reduce the sugar a bit. But it was very easy and very palatable. My 3-year-old loved it!

Pasta Shells with Portobello Mushrooms and Asparagus in Boursin Sauce

I think it needs a bit more sauce to enhance the texture and flavor but it was definitely a hit with me. I love the mushrooms and I had never cooked with Boursin cheese before. Delicious!

Cranberry Sauce Extraordinaire

This is by far the best cranberry sauce I have ever tasted. My brother asks for a double batch of it every year. It's a total hit! It is also great for those leftover turkey sandwhiches the day after Thanksgiving or even just on some toast in the morning with your coffee.

Portobello Mushroom Burgers

Perfection. So, so good. A wonderful substitution for us veggie-heads. The portobello has enough meatiness to be perfectly filling. I love the pairing of the balsamic and provolone.

Stuffed Peppers My Way

I don't think that just posting some of my drool from thinking of this recipe would be adequate! This is one of my absolute favorites for a quick easy meal. I have made it many, many times and I have taken to adding in some sauteed mushrooms. We also rub the inside and ouside of the peppers with some olive oil and maybe a little sea salt just to enhance the roasting process. YUM!

Black Bean and Salsa Soup

We cooked our own beans and had a great fresh organic salsa. Great results! Very simple and very filling. Wonderful flavor. Lots of room to play with ingredients and it was great with tortilla chips.

Wicked Garlic Tofu Saute

I have never cooked with oyster sauce before and was a bit hesitant about it. I didn't have the vegetables called for in the recipe so I just used what I had in the house. I'm eating it right now and it's quite tasty, though next time I will try to get all the correct ingredients to really get a feel for it. Personally, I think more garlic would be great; the oyster sauce has a very pleasant, mild taste. I'm not disappointed.

This recipe gets 5 stars for the peanut sauce, alone! It was fantastic! I personally added about a 1/2 tsp of red pepper flakes as I like my peanut sauce to have quite a kick, but I followed the rest of the recipe to a T and it was wonderful. Can't wait to enjoy the leftover sauce with some celery sticks!

Cajun Pasta Fresca

Very tasty dish, but FAR too much salt. Next time I will be cutting the salt by at least half. I was pleased with the great flavor of the cajun seasoning and the amount of tomatoes. I will make sure I have mozarella for the next time I make this as well!
