Chocolate Mint Cookies I
I followed the recipe all the way until the last step. Taking the comments of other viewers, I put Andes Creme de Menthes pieces on the top to give them a greenish touch. Fabulous. Made that for my 7 yr old son's school party last friday and it was a hit. Crispy outside, soft and chewy in the centre with a hint of mint. Teachers from next doors came it for a piece. I already received order from my daughter for her girls' gathering next week. Thanks for the wonderful recipe.

Cottage Pie
Wonderful cottage pie, reminds me of the meals I had in my British school's canteen. I followed the recipe for everything except the green peas coz I do not have them on hand. I use a bigger onion instead. I forgot to dot extra butter on top, but it still came out crisp with adequately brown. Next time, I will try other's suggestion of using some ketchup to make the source. My kids love it and it's definitely a keeper.

Overnight Coffee Cake
As suggested by many, I doubled the recipe using a 9"X13" pan. Instead of buttermilk, I used plain yogurt and I slightly reduced the amount of baking soda in this double portion. It only took me 30min to bake, but i purposely left it in the oven a little longer to further brown the topping which I shouldn't have. It over dried the edges. However, the cake in general is still very moist and a crowd pleaser. The fact that it could be prepared overnight is a big time saver in the morning when you get out of bed late, but still want a fresh bake over coffee. Next time, I will put in 1tsp of vanilla essence to further enrich the taste. Great recipe, love it!
