About this Cook
I'm happily married to my best bud. We have a new grand daughter an 11 year old crossbreed 1/2 black lab 1/2 springer spaniel, a 17 year old cat that is unfortunately on his way out and an almost 2 year old English Setter that we are madly in love with. I have a new job and career that will be beginning very soon and I'm so happy that I am finally leaving the mortgage industry. I strongly believe in God and I love my family and my country. I'm proud and humbled to be an American.
My favorite things to cook
I love to cook everything. I pour over cookbooks as if they are juicy novels to get ideas and learn. My husband pokes fun that if you enjoyed your dinner at our house, eat up because you may never get it again. I experiment and usually never follow a recipe to the T. I always make it my own. I love to cook things that take skill and time.
My favorite family cooking traditions
That would have to be Roasted Chicken. YUM. I learned that you should cook an average chicken uncovered at 400 to 450 for an hour and a quarter with chicken stock in the roasting pan and the whole chicken rubbed in butter. It's perfect and juicy every time.
My cooking triumphs
That would be pulling off a huge Thanksgiving sit down dinner at my home (my first one) for 22 people. My Mother was so proud of me, it was truly a defining moment for me.
My cooking tragedies
When I was 17 I was babysitting for my sister and decided to make my boyfriend a birthday cake. I had never made a cake before and so in reading the recipe it called for 2 eggs separated. My sister came home and said she would help me bake the cake and she started poking around with what I was doing and asked me; Um, why are there 2 eggs in this pot boiling? I answered, well the recipe calls for 2 eggs separated. My sister promptly fell to the floor in hysterical laughter. I have never lived this one down....it's too funny!

Coffee Cream Cheese Spread
I needed a quick recipe to bring an appetizer over to a friends house and this fit the bill. It whipped up in literal seconds, and it tasted really good. I asked my husband to sample it and he said, yum, but add some walnuts and it will be great. I did, and he was right the walnuts made it. I served with torn pieces of plain bagel. It was a hit at the party!

Herb Rubbed Sirloin Tip Roast
I followed the recipe except I slow cooked at 200 for a little longer (I like red meat medium rare) This was really delicious, my husband said thank you and this is really good at least 4 times before he was done eating. The only thing I'll do different next time is back off on some of the kosher salt. EXCELLENT recipe, will become a staple in our home.
