Chewy Jumbo Chocolate Chip Cookies

This is the only chip cookie recipe that I will be using from now on. They were SOOO good. I made the cake flour by removing 2 TBSP of the flour in that one cup and replacing it with cornstarch, then sifting several times. When I used milk chocolate chips, I reduced the sugars to 1 cup each, but the semi-sweet got 1 1/4 cups each. I used 1/2 cup crunchy peanut butter and peanut butter chips instead of chocolate chips in one batch and in a different batch, I used butterscotch chips and 1 tsp cinnamon. I could do no wrong with these cookies. I gave out cookie plates to all my neighbors and they raved over them. The ones I made for my family were gone long before they had a chance to go stale. One neighbor's comment: "These are DUNKIN' COOKIES!" Great recipe!

King Cake in a Bread Machine

First of all, what a GREAT idea! King cake in a bread machine...super easy! I made mine for Samhain, so I did traditional fall colors instead. I also filled mine with apple pie filling. I gave the recipe four stars in spite of a problem, because I didn't follow the recipe exactly and possibly caused the problem I had with it. It was horribly under-baked. The outside looked nice and golden brown but the inside was doughy. I will definitely try this again, baking it at a lower temperature and for longer. I will also come back and give this recipe five stars if it turns out well the next time.

Salmon Cakes I

These were so good! If your patties fall apart, I suggest adding an extra egg or two (I doubled the recipe anyway) and instead of making patties, make balls, roll the balls in flour and flatten with a spatula when you place them in the grease. The ones I did that to were perfect! Hubby and kids made sure there were no leftovers. I will definitely make this again.

Strawberry Cheesecake

This recipe is amazing! The taste and texture are unrivaled. It turned out so pretty with the way I swirled the strawberry sauce. Today, I'm making it with strawberries AND bananas. I do recommend baking it in a water bath to prevent cracking.

E-Z Drop Biscuits

The best and easiest drop biscuits I've ever made. I leave out the cream of tartar. The recipe is SO versatile! Add a TBSP (each) of garlic powder, onion powder and Italian seasoning, a cup of shredded cheese, or 1 TBSP cinnamon and 1/2 sugar, sprinkle with cinnamon and sugar mix before you bake. The possibilities are endless with these.

Sweet Potato Casserole II

I made this for Thanksgiving and it is now a FAMILY TRADITION! Don't skimp on the marshmallows. One of the other reviewers suggested mixing in some tiny marshmallows as well, and I totally agree. That just made it more awesome. The only complaint I have is that it is NOT good two or three days later for leftovers. The orange juice overwhelms the casserole if you don't eat it all right away. But that little snag isn't enough to take it down even one star. Make this, and you probably won't have leftovers!
