About this Cook
I'm a transplant, from South Mississippi all the way to Southern Oregon. I'm wife to a wonderful firefighter and Mama to two awesome kids. I like to cook, but I'm easily bored, so I rarely make things over and over again. Baking is my specialty!
My favorite things to cook
Chocolate Decadence Pie, sweets of all kinds, southern fried chicken, taco salad (easy and quick for the hubby's late nights at the fire department!), breads, and stir fry.
My cooking triumphs
I'm a baker at heart. I've sold baked goods to support myself in the past. The Sweet Potato Casserole from right here was SO GOOD, I now have to make it at all family holiday dinners. The best thing I ever got from my mother-in-law (other than my hubby!) was her dressing recipe. I bake the bread for it, no stuffing mix for me!
My cooking tragedies
I can't get my oven level here! I'm tired of everything coming out lop-sided! lol

Sweet Potato Casserole II
I made this for Thanksgiving and it is now a FAMILY TRADITION! Don't skimp on the marshmallows. One of the other reviewers suggested mixing in some tiny marshmallows as well, and I totally agree. That just made it more awesome. The only complaint I have is that it is NOT good two or three days later for leftovers. The orange juice overwhelms the casserole if you don't eat it all right away. But that little snag isn't enough to take it down even one star. Make this, and you probably won't have leftovers!
