The Best Vegetarian Chili in the World

I only used one green pepper, but otherwise followed to a T! Smells wonderful, tastes delicious! Make extra, this goes fast!

Zucchini Herb Casserole

Reviewed: May 14, 2009
So good! As others did, I doubled the garlic and spices/seasonings- it needed it for sure. I also added about 1/2 cup feta I had leftover, which made it a little richer, and I also added a few chopped mushrooms, and about a cup of chopped brocolli. Wonderful! My boyfriend said it was one of his faves.

Unsloppy Joes

Reviewed: Apr. 16, 2009
This was pretty great. I did not use chili powder, but added just a light dust of cayenne. I used red wine vinegar instead (didn't have regular white), but it tasted great! I mashed the beans slightly to get a better texture, which I am glad I did! I also added a handful of monterey jack cheese to bind it together. It is a bit like veggie chili on a bun, but no complaints here! Next time I will add a little TVP for texture.

Asian Chicken Noodle Salad

Reviewed: Feb. 23, 2009
Really good! I subbed almonds for pine nuts to save $$$, used poached chicken breast and left out the water chestnuts...also did a mix of cabbage and baby bok choy- delish! Not the quickest salad to mix up, but worth the time!

Chicken Piccata with Artichoke Hearts

Reviewed: Feb. 20, 2009
The way the chicken is cooked in this recipe is DELICIOUS! But the sauce was kinda wierd... too many artichoke hearts, not creamy or "saucy" at all, more like a ratatouille of artichoke hearts and onion. Something gave it an off flavor, but I will definitely be cooking chicken this way for future recipes. Better luck to you!

To Die For Blueberry Muffins

Reviewed: Feb. 20, 2009
AWESOME! Rival the big delicious muffins at my local bakery! Added extra blueberries like the other reviews mentioned, and they were a hit! Went real light on the crumb topping. I added vanilla to the second batch, but thought the flavor kind of muted the blueberries so I won't do that next time- will try a squeeze of lemon juice instead! But excellent no matter what! Filled right to the top and they rose and "muffin topped" perfectly! TIP: take them out of the oven just when set and done. Don't wait for a nice golden brown, or the edges will get dry. Thanks for the recipe!

Scrumptious Strawberry Shortcake

Reviewed: Nov. 24, 2008
Really great! I did as suggested by another user, and instead of cutting into squares after rolling out, I balled into 1" balls, then flattened a bit, dipped in sugar, then baked as directed. These were a major hit, and I will for sure use them again!

Red Garlic Mashed Potatoes

Reviewed: Nov. 24, 2008
These potatoes are wonderful! I omitted the sugar, as was suggested by many other reviews, except for a little sprinkle. I added a little extra garlic during the boil, it was terrific :)

Cranberry Sauce

Reviewed: Nov. 24, 2008
Excellent! I used apple juice instead of orange, and added just a squeeze of lemon for some extra citrus flavor... it was great! Not too sweet. I recommend cooking it for a bit longer though, otherwise it would have been a bit thin for my taste. Definetely try this!

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Nov. 24, 2008
Absolutely fabulous! Was a huge hit for even the toughest critics... a bit of sweet when you get a bit of cranberry, but never too much. I used the jimmy dean sage sausage and it was wonderful! I used a bag of pre-made pre-seasoned bread cubes, and it worked really well. I fear if I had not used pre-seasoned it might have lacked a little. But overall, the best stuffing I've had! I will use this recipe as much as possible!
